Yesterday I took a trip out to Lakeway to meet up with some friends and to check out the food at Noble Pig Sandwiches. I was reluctant to go because I had a lot going on and it was a bit of a drive. However, one of these friends described the sandwich he had as the best sandwich he’s ever eaten so how could I resist?
After combing through the menu I was happy to see the day’s special was a panko-crusted sea bass sandwich. I ordered it along with a Maine root beer and patiently waited. When it arrived it looked pretty straightforward - thick white bread, fish, lettuce, tomato, and a special sauce. But after the first bite I knew it was something extraordinary. The thick bread that I assumed would overbear the fish was as light as a cloud and it tasted like it was lightly buttered before it was toasted in the pan. The vegetables were fresh and crisp, the special sauce which I think was chipotle mayo was just the right balance against the perfectly fried sea bass. It may seem odd to describe a fish sandwich as melt-in-your-mouth but it was.
After speaking with one of the owners I found out that they bake their own bread and process the meats in their adjacent meat market, and they employ high quality ingredients including select local and sustainable items. I can safely assume this care and attention to detail is the reason that the sandwich was so unbelievable. I now agree with my friend’s sentiment; the sandwich I ate at Noble Pig was the best sandwich I’ve ever eaten.
UPDATE: Just found out that Noble Pig Sandwiches will be featured on the Travel Channel on Adam Richman’s “Best Sandwich In America”.
